The aim of this research was to evaluate the effect of microbial additives containing heterofermentative or homofermentative bacteria on the chemical and microbiological characteristics of sugar cane (Saccharum spp) silages. Sugar cane was inoculated with Lactobacillus plantarum, L. paracasei, L. brevis or L. buchneri previously isolated from sugar cane silages or commercial inoculants containing L. buchneri or L. plantarum. Silages were produced in laboratory silos (10 × 60 cm PVC tubes) and evaluated 90 days after ensiling. The objective was to evaluate the effects of laboratory-silo type and method of silage extract production, respectively, on sugarcane silage fermentation and recovery of fermentation products. Sugarcane was mechanically harvested and ensiled in three different types of laboratory silos (five replicates): 9.7 × 30 cm PVC tubes with tight lids, equipped or unequipped with Bunsen valves, and 20 L plastic buckets with tight lids and Bunsen valves. Three methods were used to produce silage extracts for pH, ethanol, acetic and lactic acids determination: extraction of silage juice by a hydraulic press and production of water extracts using a stomacher or a blender. The characteristics of fermentation and aerobic stability were evaluated in corn silage inoculated with different doses of Lactobacillus buchneri. The whole corn plant (300 g/kg DM) was ensiled in quadruplicate laboratory silos (7L). L. buchneri 40788 was applied at 5×10(4), 1×10(5), 5×10(5) and 1×10(6) cfu/g of fresh forage. Silages with no additive were used as controls. After 130 d of ensiling, the silages were subjected to an aerobic stability evaluation for 12 days, in which chemical and microbiological parameters as well as the temperature of the silage were measured to determine the aerobic deterioration. Sugarcane bagasse hydrolysate (initial acetic acid concentration = 3.5g/L), was used as a fermentation medium for conversion of xylose into xylitol by the yeast Candida guilliermondii FTI 20037. Acetic acid (2.0g/L) was added to the medium at different times of fermentation, with the aim of evaluating its effects on the bioconversion process. The addition of acetic acid to the medium after 12h of fermentation resulted in the strongest inhibition of the yeast metabolism. In this case, the xylose consumption and cell growth were, respectively, 23.22 and 11.24% lower than when acid was added to the medium at the beginning of fermentation. Microbial populations, pH, ammonium nitrogen/total nitrogen (N-NH3) ratio, concentrations of lactic acid, acetic acid and butyric acid and the chemical composition of Brachiaria decumbens cv. Basiliski silages at different regrowth ages (30, 40, 50, 60 and 70 days) were evaluated by using 2-kg capacity laboratory silos. It was used a 5 × 6 factorial scheme (5 regrowth ages × 6 fermentation periods) in a complete random design, with three replicates. The fermentation periods were 1, 3, 7, 14, 28 and 56 days. ABSTRACT Vegetable sanitization protocols recommend the use of chlorine, which has adverse effects on the environment and carcinogenic effects on humans. Acetic acid is an interesting alternative to chlorine because it possesses no risk to human health and is widely available in the form of vinegar. This study aimed to evaluate the sanitizing action of vinegar, 130 g L-1 total titratable acidity expressed as acetic acid, on lettuce.
